5 Healthy Dorm Room Recipes

Looking back on my college days, I have so many fond memories! The late nights studying, laughter filling the halls and the friendships made. Dorm living certainly had its pros and cons, but when you’re low on funds, space, and appliances, sometimes you have to get a little creative for meals and snacks when you overslept or missed a meal! Here are five healthy dorm room recipes you can prepare right in your room!

As we all know, breakfast is an essential part of the day! Eggs are always an easy microwaveable option; however, how about giving these healthy Overnight Oats a try?

Overnight Oats: Mix 1/2 cup oats, 1 cup Silk Soymilk, 1/2 teaspoon cinnamon, and 1 tablespoon honey in a bowl.

Cover and refrigerate overnight. In the morning, heat up and top with 1/4 cup blackberries or cut strawberries and 1 tablespoon of pecans. Add additional milk, if desired.

Baked Potatoes: Wash your potato and poke several holes into both sides with a fork. Place your potato on a microwave-safe plate and microwave on high for 5 minutes. Turn your potato over and cook for another 5 minutes. Add toppings to your liking. Salt, pepper, butter, sour cream, broccoli, cheese, etc. The possibilities are quite endless.

Or you can impress your roommate and suitemates with a mouthwatering sandwich! Serve with a pickle and baked chips; they’ll think they visited the local deli.

Ham & Arugula Sandwich: Top one side of bread of choice with 3-4 ounces of ham, 1/3 cup arugula, and 1 tablespoon shaved fresh asiago cheese (or cheese of choice). Mix one teaspoon of light mayonnaise and one teaspoon of Dijon Mustard and spread evenly over the second side of bread. Sprinkle with pepper (optional).

Have a little picnic in your dorm room with hot dogs and baked beans!

Turkey Franks: Place turkey frank in wheat hot dog bun (or bun of choice). Wrap in a paper towel. Microwave on HIGH 15 to 20 seconds or until heated through. Add toppings of choice (relish, ketchup, mustard, etc.)

Chicken Fajitas: Add sliced green and red peppers along with sliced onions to a 2-3 quart microwaveable dish. Season your peppers and onions with seasoning of choice. Add a package of chicken tenders to your dish and add additional seasoning. Cover and microwave on high for 10-12 minutes. Serve with fajita or soft taco wraps, cheese and a dollop of sour cream.

I’m throwing in an extra recipe for all of you that might have a sweet tooth — dessert!

3-2-1 Cake: Mix 1 box of Angel Food Cake and 1 box of Chocolate Cake (or flavor of choice) together in a large storage bag or container. Be sure to mix the powdered cake mixture thoroughly. Add 3 tablespoons powdered cake mixture and 2 tablespoons of water to your coffee mug and mix well. Microwave for 1 minute. Enjoy!
