We all know we should be eating more greens in our diet, but if you’ve already seen your healthy New Year’s Resolutions begin to slack, then why not use St. Patrick’s Day as an excuse to get back on track? I’m sharing a green power salad that will not only fill you up with healthy nutrients, but it’s the perfect meal for this favorite Irish holiday!
Now if you’re hosting friends over to your apartment, you might want to spice up the menu so it’s festive for the occasion. St. Patrick’s Day is often full of green beer and corned beef. While those are great (and I’ve even linked a few entrée ideas below), every meal deserves a tasty start. Set out this salad “bar style” with all the green fixings for your friends and family to create their own green power salads. What to include? I’ve made a list!

You can certainly tailor your salad bar to your favorite flavors but keep it mostly green if you want to avoid being pinched on St. Patrick’s Day! Around the table, add in a few St. Patrick’s Day decorations like mini clovers from the craft store. Serve salads with green napkins, of course!
Naturally, green goddess dressing was my choice for this green power salad! You could easily make your own or make an avocado-based creamy dressing that would also be delicious. It’s amazing just how “green” you can make a salad with a little effort! Plus, you’re getting tons of healthy additions to your diet that this salad might just become a rotating staple in your kitchen!
Not having a party? Just make this salad for one! It’s easy to adjust down in serving size to make exactly the right amount. Or surprise your co-workers by setting up the salad bar at work and help everyone go green!
It’s easy to find dozens of sweet treat recipes these days, but it can be a bit harder to find healthy options that are just as delicious and perfect for celebrating your favorite holidays. I hope this green power salad makes your St. Patrick’s Day the best yet!
