Horror-able Edible Bloody Eyeball Cupcakes

I am a lover of all things Halloween…especially spooky foods! If you are anything like me, these bloody eyeball cupcakes will be right up your alley. I also love themed holiday foods that are super simple to make. It actually does not get much easier than making these spooky themed cupcakes. Make up a large batch or two to send to school for a Halloween party, or serve up at your own Halloween party. Either way, these are likely to be the star of the show.

Start with your favorite boxed cake mix, and whip up a batch of your favorite cupcakes. I choose a yellow cake mix that we enjoy at our house and added them to green and purple cupcake liners. While those cupcakes bake and cool, you can start on the eyeball portion of this edible craft. You will need some white gumballs and some edible markers. Edible food color markers can be picked up in the craft or baking section of your store. Be sure you get the edible version please! Then just draw on an eye center as well as some bloody lines. Yes these are just as easy as drawing or coloring with regular markers. I choose to use green and purple for the eyes so they would match the liners I used above. Get creative with the colors and make these fun cupcakes your own.

Once you have enough eyeballs for all of your cupcakes, it is time to decorate. (NOTE: Be sure your cupcakes have cooled completely before you begin this step.) Start with your favorite white icing (either homemade or store bought), and ice the tops of the cupcakes. Add on a dollop of your favorite jam or jelly (I choose a strawberry version that is extra runny). Then put that gumball eye right in the center of your jam and press down.

The markers are definitely easy enough to use that a school aged child can draw on some eyes while you mix the cupcake batter. The making of this Halloween treat can be a family affair.
