I grew up in Utah, fifteen minutes from Snowbird Ski Resort. Every summer, my dad would take us (five kids!) camping in the mountains. We would spend the day hiking and explore and come back to camp, light a fire for dinner & dessert (s’mores, of course) and sing the night away.
After college, I moved from Utah to Washington, D.C. where, because I lived in the city, quick weekend camping options were limited. I missed the mountains greatly but missed the adventures of camping even more. I was so far away from the Dutch oven dinners, songs around the campfire and the ooey gooey s’mores we made late in the night. In an effort to recreate those delectable treats and memories, I came up with the indoor, or city dwellers, version: S’more Bark.
My roommates and I would gather all the ingredients (the ever-favorite graham crackers, chocolate, and marshmallows), assemble them on hot summer nights and eat them on our apartment deck. They weren’t campfire-roasted, but still as gooey and delicious as ever. I was far from the mountains and campfire that I loved, but I made new wonderful memories in the process. The indoor s’more tradition continued as I married and had children. I now make the S’more Bark every year as part of a Back To School Party for my kids. I typically create a tag or sign that says ‘It’s Time for S’MORE School’ to help the kiddos get excited for the year ahead. This activity makes a great send-off to the Summer and gets our family ready for, and thinking about, coming changes as we reenter the school year and prepare for the holidays. While I don’t get out camping as much as I would like, and still live far away from the mountains, I have this wonderful recipe that was created in remembrance of the activity, but has come full circle and holds years of great (non-camping) memories.
